Whole Wheat Mac-N-Cheese

Whole Wheat Mac N Cheese

Around Thanksgiving, I was looking for a macaroni and cheese recipe that wasn’t too difficult, and I came across Alton Brown’s stove top mac-n-cheese recipe online.  As you may already know, in our home we try to make things a tad healthier even for holidays like Thanksgiving.  So I decided to make some changes to the recipe and I came up with Whole Wheat Mac-N-Cheese with a couple of substitutions and changes.  I don’t use egg and I substituted the butter for extra virgin olive oil.

Total time: 35 minutes

Prep: 10 minutes

Cook time: 25 minutes

1/2 pound elbow whole grain whole wheat macaroni
4 tablespoons butter (you can use extra virgin olive oil instead because it’s healthier)
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt or sea salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded

In a large pot of boiling, salted water cook the pasta to al dente and drain. I put a little extra virgin olive oil in my water that I’m boiling the pasta.

Whisk together the milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.  Enjoy!

  • Homemade macaroni and cheese is definitely the best! I always use the whole wheat pasta too… the protein and fiber boost are worth it!

I almost put a note, but then I didn't. To be honest, Amy, we try to not consume so much gluten even though no one in my house has been diagnosed with any gluten sensitivities. You can make the swap for whole wheat pasta for quinoa or amaryth (I hope I'm spelling that right). But I've made things with quinoa noodles before and I literally wanted to just eat the noodles without anything on them because they were so good lol.

  • Mm…we have made this! It's sooo good! I actually love whole wheat pasta more. I think I might be rare that way but I find it quite delicious. Especially with cheese. Although we totally used the egg and butter.

I thought it was pretty ironic that you were mentioning mac and cheese in your post and I had this one scheduled. :) You know me…I have to try to give the healthier alternative around here :)

  • I've tried this with mustard before. I might have to give it a shot.

  • What a healthy way to make mac and cheese. I'm really trying to stop eating so many simple carbs and switch to complex carbs instead.

  • I only wished they had it in the same color as the one that's not whole wheat. It's difficult to get my son to try new things, especially ones that aren't familiar looking :)

  • Looks easy and delish! Will definitely give this a try. We usually cook the baked mac that's readily available in the market, it's more of an instant food again so I'm gonna try to make a healthier one just like this!:)

  • Oh this sounds like something my daughter would eat. My boys aren't big fans of whole wheat products even though it is so much better for you. Will have to share this with her.

Love that you make it healthier. I must admit that my mac-n-cheese is definitely not on the healthy side. Though, we don't have mac-n-cheese that often. I do love the sound of the dry mustard in the recipe. Might have to sneak a healthy side dish in on the kids…..

  • That recipe looks delicious. I've been trying to get healthier for the last few months, but homemade mac & cheese is absolutely my weakness. So far, I've been making a recipe from Cooking Light and using Smart Taste pasta. But, I'm definitely going to have to try this (though my husband isn't a particular fan of mac & cheese). Thanks for the wonderful recipe!
