Whole Wheat Mac N Cheese

Around Thanksgiving, I was looking for a macaroni and cheese recipe that wasn’t too difficult, and I came across Alton Brown’s stove top mac-n-cheese recipe online.  As you may already know, in our home we try to make things a tad healthier even for holidays like Thanksgiving.  So I decided to make some changes to the recipe and I came up with Whole Wheat Mac-N-Cheese with a couple of substitutions and changes.  I don’t use egg and I substituted the butter for extra virgin olive oil.

 

 

Total time: 35 minutes

Prep: 10 minutes

Cook time: 25 minutes

 

Ingredients
1/2 pound elbow whole grain whole wheat macaroni
4 tablespoons butter (you can use extra virgin olive oil instead because it’s healthier)
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt or sea salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded

Directions
In a large pot of boiling, salted water cook the pasta to al dente and drain. I put a little extra virgin olive oil in my water that I’m boiling the pasta.

Whisk together the milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.  Enjoy!

      I almost put a note, but then I didn't. To be honest, Amy, we try to not consume so much gluten even though no one in my house has been diagnosed with any gluten sensitivities. You can make the swap for whole wheat pasta for quinoa or amaryth (I hope I'm spelling that right). But I've made things with quinoa noodles before and I literally wanted to just eat the noodles without anything on them because they were so good lol.

  • Mm…we have made this! It's sooo good! I actually love whole wheat pasta more. I think I might be rare that way but I find it quite delicious. Especially with cheese. Although we totally used the egg and butter.

  • What a healthy way to make mac and cheese. I'm really trying to stop eating so many simple carbs and switch to complex carbs instead.

    Hot sauce? I would never think to try that, but sounds interesting! Hopefully not too hot, though. Mac and cheese is a hit around here but we opt for the box kind. Thanks for sharing a healthy version that I could try at home!

  • I think I may be the only person in the world who doesn't love mac and cheese. I like it occasionally only. I like mine with frozen peas added during the last 2 minutes of the noodle boiling. Yum!
